Delicious Pollo a la Brasa

Happy Pollo a la Brasa Day!  On this day Peruvians everywhere celebrate their favorite dish.  Invented in the middle of the twentieth century by a Swiss immigrant, on the basis of an old tradition of Peru’s elites, this rotisserie chicken with french fries has taken off.  There is hardly a corner of urban Peru, or even remote areas where highways go, in which you cannot find people hungrily devouring this chicken, fries, and  dressings.   Read the rest of this entry
